Naren Young, Dante | New York City

This cocktail from Dante’s Naren Young “looks light, dainty and somewhat innocent, but because of the dry vermouth, it’s much more austere and bone dry,” he says. Supposedly dating back to Rome in the 1950s, this riff on the Negroni alters the ratios and swaps Campari for slightly spicy Contratto Bitter and sweet vermouth for dry, making for a more complex and all-around drier cocktail.

As Young puts it, “This is for the Negroni drinker that wants to be challenged.”


Serving: 1

  • 1 ounce gin, preferably Dorothy Parker
  • 3/4 ounce Contratto Bitter
  • 3/4 ounce dry vermouth, preferably La Quintinye

Garnish: lemon twist, expressed and discarded, and dehydrated lemon peel

  1. Combine all ingredients in mixing glass with ice.
  2. Stir and strain over ice into etched rocks glass.
  3. Express lemon twist over top and discard. Garnish with dehydrated lemon peel.
